Stellar Steak Salad Recipe

We love a good steak around here and my husband is quite a skilled cook when it comes to the grill. When we are craving steak but want to watch our calories and our grocery bill, this Stellar Steak Salad is the perfect answer. It’s a summer dish is fitting for a weeknight supper or even guests.

Stellar Steak Salad

Serves 4-6


2 good-sized steaks (We use anything from ribeye to top sirloin)

Worcestershire sauce

Montreal Steak Seasoning

Large bag of hearts of Romaine

Red and yellow cherry tomatoes

Olive oil

Kosher Salt & freshly ground pepper

Blue cheese crumbles

Ranch dressing

Balsamic glaze (You can find this at your grocery. We like the Trader Joe’s version.)

Preheat the oven to 400 degrees and heat up your outdoor grill to about the same. Place cherry tomatoes on a sheet pan and drizzle with olive oil. Roast in the oven for about 15 minutes. In the meantime, take a fork and poke a few holes in each steak. Pour Worcestershire sauce over the steaks. Sprinkle generously with the Montreal seasoning and don’t forget the edges. Grill to medium (about 8 minutes per side for us) and allow to rest for 10 minutes. Slice the steaks. Assemble individual plates starting with the Romaine, then adding tomatoes, steak, and cheese. Drizzle with both ranch dressing and the balsamic glaze. It’s the mixture of the two dressings that will take it over the top. Enjoy!

Beach Bucket Surprise Dessert

I have the most fun, festive summer dessert for you today. You serve it in a beach bucket because it looks like sand… but tastes divine! Dazzle kids and adults alike with this clever treat.


Isn’t it just the cutest? It’s super simple and delicious. This is the perfect kind of thing to serve at a summer play date, pool party, or barbecue.

Beach Bucket Surprise Dessert


One stick butter, softened

1 8 oz. block of cream cheese, softened

1/2 cup confectioner’s sugar

2 small boxes of instant vanilla pudding mix

3 1/2 cups milk

12 oz. Cool Whip, thawed

2 packages of Golden Oreos

White and dark chocolate Melting wafers (my grocer substituted a chocolate baking bar in my online order and it worked just fine.)

Shell molds (like these darling ones)

Cute beach bucket (I had to have this flamingo bucket of course!)


Start by making your chocolate shells. Melt a little of each chocolate in the microwave then slightly mix a little of the dark into the white. Just barely swirl the two together, then pour into the molds. Put the mold in the refrigerator to harden. I have a random little mold from our local aquarium that I had to use twice to get enough shells. This one would work much better. The swirled effect makes them look more realistic.


Next, chop cookies very fine in a food processor or blender. This creates the “sand.” The white filling will disappear.


Cream the butter, cream cheese and sugar together in a mixer. In a large bowl, combine milk, pudding, and Cool Whip. Add the butter mixture and mix well. Layer your beach bucket starting with some of the cookie crumbs, then a layer of the cream mixture. Repeat layers, ending with the cookie crumbs. Stick the sand shovel in and add the chocolate shells. Chill until ready to serve.

Summer is almost here and I am counting the days… well, actually the minutes until school is out and we can enjoy some lazy days at the pool. Today I’m sharing my summer essentials to help you have the best summer ever!

Beauty & Sun

This sunscreen is my absolute favorite. It smells divine while protecting you from harmful rays. Grab a bottle or two so you’re ready to hit the pool, the park or the beach. I also love this perfume this time of year. It smells exactly like you hope you smell on a summer day… a mix of tropical scents and sun. Get a bottle for yourself or as a gift for the friend who shares their beach house with you! After all your fun in the sun, you’ll want a deep conditioner to revive your pool or beach hair. I discovered this one a few years ago… it’s technically “ethnic hair care” but I love it for my color-treated blonde. It smells great, too.

Lazy Lunch

I’m always thrilled to relinquish my lunch-packing duties at the end of the school year and then I remember… they still need lunch in the summer! Ha! This quesadilla maker is my go-to for quick and easy meals. You just need some tortillas and shredded cheese. I often throw in leftover chicken, too.

Summer Looks

Summer is all about taking it easy and getting out to see friends in the beautiful sunshine. These sandals are my absolute favorite to wear on a warm day. They go with everything. Seriously… everything. They are a great investment. Plus, they are on sale! I’ve owned these sunglasses for several years and I always get compliments on them. The pop of pink makes them extra cute… another thing you can wear every single day.
