Summer makes us feel extra campy and silly, so we are throwing it back to 1965 to a crazy, goofy, classic beach movie… Beach Blanket Bingo!

I snagged this “Summer” beach towel at Target knowing I wanted to use it as a tablecloth. It might sound silly, but doing things like covering your table with a beach towel makes things fun and unexpected for your kids.

This movie has a lot of bikinis (not a shocker) and kissing… but overall it’s pretty clean and family friendly… I mean, it’s from 1965! The story line is flimsy, the characters are over to top… but it screams summer and what’s not to love? It has skydiving, dancing, and even a biker gang. This colorful film called for a colorful table. A mix of Lilly Pulitzer plates and tropical touches made it all come together.

Cheddar brats are a favorite around here and seemed fitting for this movie night. They are always a hit with my kids!

For our drink, we mixed coconut La Croix with a heavy splash of pineapple juice. The result is refreshing and light. Try it!

Summer nights offer more relaxed bed times, opportunities to linger over a family dinner and the perfect opportunity to enjoy a movie. Here’s to summer lasting long!

Stellar Steak Salad Recipe

We love a good steak around here and my husband is quite a skilled cook when it comes to the grill. When we are craving steak but want to watch our calories and our grocery bill, this Stellar Steak Salad is the perfect answer. It’s a summer dish is fitting for a weeknight supper or even guests.

Stellar Steak Salad

Serves 4-6

Ingredients:

2 good-sized steaks (We use anything from ribeye to top sirloin)

Worcestershire sauce

Montreal Steak Seasoning

Large bag of hearts of Romaine

Red and yellow cherry tomatoes

Olive oil

Kosher Salt & freshly ground pepper

Blue cheese crumbles

Ranch dressing

Balsamic glaze (You can find this at your grocery. We like the Trader Joe’s version.)

Preheat the oven to 400 degrees and heat up your outdoor grill to about the same. Place cherry tomatoes on a sheet pan and drizzle with olive oil. Roast in the oven for about 15 minutes. In the meantime, take a fork and poke a few holes in each steak. Pour Worcestershire sauce over the steaks. Sprinkle generously with the Montreal seasoning and don’t forget the edges. Grill to medium (about 8 minutes per side for us) and allow to rest for 10 minutes. Slice the steaks. Assemble individual plates starting with the Romaine, then adding tomatoes, steak, and cheese. Drizzle with both ranch dressing and the balsamic glaze. It’s the mixture of the two dressings that will take it over the top. Enjoy!
